Fresh Shrimp Ceviche

This fresh shrimp ceviche is a vibrant and zesty appetizer, perfect for warm days or as a light meal. With marinated shrimp, fresh vegetables, and a tangy citrus kick, it’s both refreshing and flavorful. Serve it with tortilla chips, and you’ve got a crowd-pleasing dish in no time!


Ingredients You'll Need


 

  • 1 lb raw shrimp, peeled and deveined

  • 1/2 cup fresh lime juice (about 4-5 limes)

  • 1/2 cup fresh lemon juice (about 2 lemons)

  • 1 medium red onion, finely chopped

  • 1 medium cucumber, diced

  • 1 medium tomato, diced

  • 1/4 cup cilantro, chopped

  • 1 jalapeño, minced (optional for heat)

  • Salt and pepper to taste

  • Tortilla chips for serving


Preparing the Shrimp

  • Cut the shrimp into small bite-sized pieces and place them in a non-reactive bowl.

  • Pour the lime and lemon juice over the shrimp, making sure they are fully submerged. Cover and refrigerate for 30 minutes to 1 hour, or until the shrimp is opaque and "cooked" in the citrus juice.


Making the Ceviche

  • Once the shrimp has marinated, drain any excess juice.

  • Add the chopped red onion, cucumber, tomato, cilantro, and jalapeño (if using) to the shrimp. Stir to combine.

  • Season with salt and pepper to taste.


Serving

  • Serve the ceviche chilled with tortilla chips or over a bed of lettuce for a light, refreshing meal.
