Ingredients You'll Need
1 lb raw shrimp, peeled and deveined
1/2 cup fresh lime juice (about 4-5 limes)
1/2 cup fresh lemon juice (about 2 lemons)
1 medium red onion, finely chopped
1 medium cucumber, diced
1 medium tomato, diced
1/4 cup cilantro, chopped
1 jalapeño, minced (optional for heat)
Salt and pepper to taste
Tortilla chips for serving
Preparing the Shrimp
Cut the shrimp into small bite-sized pieces and place them in a non-reactive bowl.
Pour the lime and lemon juice over the shrimp, making sure they are fully submerged. Cover and refrigerate for 30 minutes to 1 hour, or until the shrimp is opaque and "cooked" in the citrus juice.
Making the Ceviche
Once the shrimp has marinated, drain any excess juice.
Add the chopped red onion, cucumber, tomato, cilantro, and jalapeño (if using) to the shrimp. Stir to combine.
Season with salt and pepper to taste.
Serving
Serve the ceviche chilled with tortilla chips or over a bed of lettuce for a light, refreshing meal.
