12 large scallops, patted dry

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • Salt and pepper to taste

  • 1/2 teaspoon garlic powder

  • 1 tablespoon fresh lemon juice

  • Fresh parsley, chopped (for garnish)

  • Lemon wedges (for serving)


Preparing the Scallops

  • Pat the scallops dry with paper towels to remove excess moisture. This helps achieve a perfect sear.

  • Season the scallops with salt, pepper, and garlic powder on both sides.


Searing the Scallops

  • Heat olive oil and butter in a large skillet over medium-high heat.

  • Once the butter is melted and the pan is hot, add the scallops in a single layer. Be careful not to overcrowd the pan.

  • Sear the scallops for 2-3 minutes on each side until they develop a golden-brown crust and are opaque in the center.

  • Remove the scallops from the skillet and set aside.
