Ingredients You'll Need

2 cans young green jackfruit in brine (drained and shredded)

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup BBQ sauce (store-bought or homemade)

  • 1/2 tsp smoked paprika

  • 1/2 tsp cumin

  • 1 tbsp apple cider vinegar

  • 1 tsp maple syrup (optional for sweetness)

  • Salt and pepper, to taste

  • 4-6 buns (gluten-free if needed)

  • 1 cup vegan coleslaw (optional for topping)

Prepare the Jackfruit

  • Drain and rinse the jackfruit, then use your hands or two forks to shred the pieces into a pulled texture.

Cook the Jackfruit

  • Heat olive oil in a large skillet over medium heat.

  • Add the onion and garlic, and sauté for about 5 minutes until softened.

  • Add the shredded jackfruit, smoked paprika, cumin, and a pinch of salt and pepper.

  • Cook for another 5-7 minutes until the jackfruit begins to brown slightly.

Add BBQ Sauce

  • Pour in the BBQ sauce, apple cider vinegar, and maple syrup (if using).

  • Stir to coat the jackfruit well and cook for an additional 10-15 minutes, stirring occasionally. Adjust seasoning as needed.

Assemble the Sandwiches

  • Toast the buns if desired, then pile on the BBQ jackfruit mixture.

  • Top with vegan coleslaw if desired and serve immediately.

Enjoy!
