Ingredients You'll Need
2 cans young green jackfruit in brine (drained and shredded)
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup BBQ sauce (store-bought or homemade)
1/2 tsp smoked paprika
1/2 tsp cumin
1 tbsp apple cider vinegar
1 tsp maple syrup (optional for sweetness)
Salt and pepper, to taste
4-6 buns (gluten-free if needed)
1 cup vegan coleslaw (optional for topping)
Prepare the Jackfruit
Drain and rinse the jackfruit, then use your hands or two forks to shred the pieces into a pulled texture.
Cook the Jackfruit
Heat olive oil in a large skillet over medium heat.
Add the onion and garlic, and sauté for about 5 minutes until softened.
Add the shredded jackfruit, smoked paprika, cumin, and a pinch of salt and pepper.
Cook for another 5-7 minutes until the jackfruit begins to brown slightly.
Add BBQ Sauce
Pour in the BBQ sauce, apple cider vinegar, and maple syrup (if using).
Stir to coat the jackfruit well and cook for an additional 10-15 minutes, stirring occasionally. Adjust seasoning as needed.
Assemble the Sandwiches
Toast the buns if desired, then pile on the BBQ jackfruit mixture.
Top with vegan coleslaw if desired and serve immediately.
