These crispy, golden zucchini fritters are the perfect snack or appetizer. Made with fresh zucchini, Parmesan cheese, and garlic, they’re lightly fried to perfection and served with a tangy yogurt or sour cream dipping sauce. Simple, flavorful, and a great way to enjoy zucchini!

Ingredients You'll Need
2 medium zucchinis, grated
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
Salt and pepper to taste
2 tablespoons olive oil (for frying)
Optional: Fresh herbs like parsley or dill, chopped
Dipping sauce: Sour cream or Greek yogurt with a squeeze of lemon juice
Prepare the Zucchini
Grate the zucchinis using a box grater or food processor.
Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out any excess moisture.
Make the Fritter Mixture
In a large bowl combine:
Grated zucchini
Flour
Parmesan cheese
Egg
Minced Garlic
A pinch of salt and pepper.
Mix until everything is well combined. Add chopped herbs if using.
Fry the Fritters
Heat olive oil in a large skillet over medium heat.
Scoop 2 tablespoons of the zucchini mixture and shape it into a small patty.
Place it in the skillet and flatten slightly with a spatula.
Repeat with the remaining mixture.
Cook Until Crispy
Fry the fritters for about 3-4 minutes per side or until golden brown and crispy.
Once cooked, remove from the skillet and place on a paper towel-lined plate to drain excess oil.
Serve
Serve the fritters warm with a side of sour cream or Greek yogurt dip with a squeeze of lemon juice.
