Zucchini Fritters

These crispy, golden zucchini fritters are the perfect snack or appetizer. Made with fresh zucchini, Parmesan cheese, and garlic, they’re lightly fried to perfection and served with a tangy yogurt or sour cream dipping sauce. Simple, flavorful, and a great way to enjoy zucchini!


Ingredients You'll Need


 
  • 2 medium zucchinis, grated

  • 1/2 cup all-purpose flour

  • 1/4 cup grated Parmesan cheese

  • 1 egg

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • 2 tablespoons olive oil (for frying)

  • Optional: Fresh herbs like parsley or dill, chopped

  • Dipping sauce: Sour cream or Greek yogurt with a squeeze of lemon juice


Prepare the Zucchini

  • Grate the zucchinis using a box grater or food processor.

  • Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out any excess moisture.


Make the Fritter Mixture

  • In a large bowl combine:

    • Grated zucchini

    • Flour

    • Parmesan cheese

    • Egg

    • Minced Garlic

    • A pinch of salt and pepper.

  • Mix until everything is well combined. Add chopped herbs if using.


Fry the Fritters

  • Heat olive oil in a large skillet over medium heat.

  • Scoop 2 tablespoons of the zucchini mixture and shape it into a small patty.

  • Place it in the skillet and flatten slightly with a spatula.

  • Repeat with the remaining mixture.


Cook Until Crispy

  • Fry the fritters for about 3-4 minutes per side or until golden brown and crispy.

  • Once cooked, remove from the skillet and place on a paper towel-lined plate to drain excess oil.


Serve

  • Serve the fritters warm with a side of sour cream or Greek yogurt dip with a squeeze of lemon juice.
